Egusi (also known by variations including agusi, agushi) is the name for the fat- and protein-rich seeds of certain cucurbitaceous plants (squash, melon, gourd), which after being dried and ground are used as a major ingredient in West African cuisine.
Authorities disagree whether the word is used more properly for the seeds of the colocynth, those of a particular large-seeded variety of the watermelon, or generically for those of any cucurbitaceous plant.[2] The characteristics and uses of all these seeds are broadly similar. Major egusi-growing nations include Mali, Burkina Faso, Togo, Ghana, Côte d’Ivoire, Benin, Nigeria, and Cameroo
Egusi colosynthis citrullus lanatus is a West African melon. Agushi, agusi and egushi are other names for this fruit. The melon’s flesh is bitter and inedible; only the seeds of the fruit are eaten. Egusi seeds are high in protein and their flavor is said to be close to that of pumpkin seeds.
Muskmelon seeds is another name for cantaloupes, casaba and other melons with a musky, sweet scent. These are vigorous plants with good foliage cover. It has extended shelf life with good keeping quality and good taste. Muskmelons are varieties of melons that may have orange, green or white edible flesh. This delicious fruit grows in the summer months and is a refreshing and cool treat after a day of working or playing outdoors in the hot sunshine.
